2 cups brown rice
2 large ripe avocados

Instructions

1.Rinse the brown rice until the water runs clear, then add it to a pot with 4 cups of water and a pinch of salt. Bring to a boil, then lower the heat to a simmer and cook for 45-50 minutes or until the rice is tender and all the water is absorbed.
2.While the rice is cooking, prepare the rest of the ingredients. Cut the avocado in half, remove the pit, and dice the flesh. In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil. Toast the sesame seeds in a dry pan over medium heat until golden brown.
3.Trim the roots off the beech mushrooms and tear them into smaller pieces. Wash the broccoli rabe and cut it into bite-size pieces. Heat up a skillet over medium heat and add the sesame oil. Add the vegetables and sauté until golden brown. Season with salt and pepper to taste.
4.Cut the tofu into bite-size pieces. Coat them with cornstarch or flour, shaking off the excess. Heat up oil in a skillet over medium-high heat and fry the tofu until golden brown on all sides.
5.To serve, divide the brown rice into bowls, top with the sautéed vegetables, fried tofu, and sesame seeds. Drizzle with the dressing and top with diced avocado.
