2 packages extra firm tofu , drained cut in half horizontally
4 cups vegetable broth
2 cups water
1/2 cup rice wine or 1/2 cup sake
1 tablespoon fresh ginger , minced
3 tablespoons reduced sodium soy sauce
1 1/2 cups green onions , diagonally sliced ( mainly green part )
1/2 lb Baby Spinach
1/2 lb soba noodles

Instructions

1.In a small bowl, whisk together hoisin sauce, 1/3 cup rice wine, soy sauce, garlic, five-spice powder, and sesame oil. Set aside.
2.Heat a large skillet over medium-high heat, add the tofu and cook for 5 minutes on each side until golden brown. Drizzle with half of the hoisin sauce mixture.
3.In a large pot, combine vegetable broth, water, 1/2 cup rice wine, ginger, and 3 tablespoons soy sauce. Bring to a boil and reduce heat to medium. Add 1 cup green onions and spinach, and cook until wilted, about 3 minutes.
4.Cook soba noodles in boiling water until tender (follow package instructions), drain and immediately rinse with cold water.
5.Divide the noodles into 6 bowls, add the broth, and top with tofu. Drizzle the remaining sauce mixture and garnish with the remaining green onions.
