Ingredients

1 1/2 cups orange lentils
1 large onion , chopped
3 garlic cloves , chopped
1 small red bell pepper , chopped
1 carrot , grated
2 tablespoons tomato paste
butter
oil
salt & pepper
1 chicken bouillon cube
2 tablespoons cumin
1 dash turmeric
1 dash paprika
1 tablespoon heavy cream
2 white pita breads
oil ( for frying )
1 dash salt
1 dash cumin
1 dash heavy cream
sauteed sliced red bell pepper ( if u want to use , put a slice or two per bowl )
Winter Lentil Soup, also known as Shorbaat Aads, is a popular dish in Egypt, especially during winter when lentils are in season. This soup is simple yet hearty, made with orange lentils, aromatic spices, and a creamy texture achieved with a hint of butter and cream. The crispy pita bread on top adds a pleasant crunch, and the sautéed red pepper slices add color and flavor to the dish. Winter Lentil Soup is an economical and filling meal that can be made in large batches and frozen for later use.

Instructions

1.Rinse the lentils in cold water and drain them. Set it aside.
2.Melt butter with oil in a saucepan over medium heat. Add chopped onion and sauté until it softens.
3.Add chopped garlic and sauté for about a minute.
4.Add in peppers, grated carrot, and tomato paste, and then sauté for another 3-4 minutes.
5.Mix the spices (cumin, salt, turmeric, and paprika) and chicken bouillon cube with the vegetables. Stir and simmer the mixture for about 2-3 minutes.
6.Add lentils and water. The amount of water should be 4 cups in total. After that, bring the mixture to a boil and then, cover and simmer for 25 minutes on low-medium heat. Stir occasionally.
7.Add heavy cream to the soup and blend until it becomes smooth. At this stage, you can add more water if you want to thin the soup.
8.In a small skillet, heat oil and fry pita bread until it becomes golden brown and crispy. Then take it out and sprinkle with salt and cumin. Rub it in and cut it into bite-sized pieces.
9.Chop extra red pepper slices and sauté them in oil until they soften.
10.Serve the soup in a bowl and garnish it with fried bread chunks, sautéed red pepper slices, and a dash of heavy cream.
