2 large flour tortillas

4 tablespoons shredded oaxaca cheese ( or Mexican cheese blend )
2 tablespoons butter
1 tablespoon olive oil
1 pinch salt
1/4 cup Pace Picante Sauce ( or salsa )
1/4 cup pizza sauce ( marinara sauce )

Instructions

1.In a large bowl, mix together ricotta cheese and shredded oaxaca cheese.
2.Preheat a large skillet over medium heat.
3.Spread 1 tablespoon of butter on each tortilla. Place one tortilla in the skillet and cook until golden brown, about 2-3 minutes.
4.Flip the tortilla over and spread the cheese mixture evenly over the top.
5.Add a pinch of salt and cover with the second tortilla. Cook until the bottom tortilla is golden brown.
6.Flip the tortilla over and spread Pace Picante sauce or salsa evenly over the top, followed by pizza or marinara sauce.
7.Cover with a lid and cook until the cheese is melted and bubbly, about 2-3 minutes.
8.Remove from skillet, cut into wedges and serve.
