Ingredients

1 roasting chicken , cut into parts ( about 3 1/2 pounds )
1 large onion , chopped
4 stalks celery , chopped
3 carrots , peeled and chopped
20 ounces chicken broth ( canned or fresh )
2 quarts water
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon chopped fresh parsley ( or 1 teaspoon dried parsley )
1 large onion , diced
4 stalks celery , chopped
3 carrots , peeled and sliced
1 bunch escarole , cleaned and chopped
salt and pepper , to taste
1/4 lb pasta , cooked according to package ( small pasta , such as acini de pepe or ditalini )

Instructions

1.In a large pot, simmer chicken parts, onion, celery, carrots, chicken broth, and water for 45 minutes to an hour until chicken is tender.
2.In a separate bowl, combine ground beef, breadcrumbs, egg, salt, pepper, and parsley. Mix well and shape into meatballs.
3.Add meatballs, diced onion, sliced carrots, and chopped celery to the pot with the chicken. Simmer for another 20-25 minutes.
4.Add escarole, salt, and pepper to taste. Simmer for another 10 minutes.
5.Add cooked pasta and sprinkle with parmesan cheese before serving.
