1 lb frozen cheese tortellini
12 ounces egg noodles
2 heads escarole , roughly chopped
Italian Wedding Soup is a traditional Italian-American soup served at weddings (hence the name) and other special occasions. The soup is believed to have originated in Naples and is typically made with chicken broth, meatballs, and escarole. In this Firehouse Style version, we've added extra vegetables and cheese tortellini to make it a complete meal. This soup is perfect for chilly days and is sure to warm you up from the inside out.

Instructions

1.In a large pot, combine the chicken broth, chicken breasts, baby carrots, celery, onion, chopped tomatoes with their juice, and parsley. Bring to a boil over high heat.
2.Reduce the heat to medium-low and simmer until the chicken is cooked through, about 40 minutes.
3.Remove the chicken breasts from the pot and chop into bite-sized pieces. Return the chicken to the pot.
4.Add the rolled meatballs and salt, and simmer for 20 minutes.
5.Add the frozen cheese tortellini, egg noodles, and escarole. Simmer until the vegetables and pasta are tender, about 10 minutes.
6.Serve hot and enjoy!
