Instructions

1.In a large pot or dutch oven, brown the Italian turkey sausage over medium heat. Remove sausage and set aside.
2.Add onion and potatoes to the same pot and cook until vegetables are slightly softened.
3.Add diced tomatoes, chicken broth, oregano, basil, red pepper flakes, and garlic powder to the pot. Bring soup to a simmer and let cook until potatoes are fork-tender.
4.Add sausage back into the pot and continue cooking until sausage is heated through.
5.Serve immediately with a sprinkle of monterey jack pepper cheese, parmesan cheese, and crumbled cracker on top.
