Ingredients

2 lbs ground beef
1 package spaghetti sauce mix
1 teaspoon seasoning salt
1 can tomatoes , cut into bite-sized pieces
1 can tomato sauce
1/2 cup water
1 can green chilies ( seeds removed and then chopped or diced )
8 -10 corn tortillas
1 1/2 lbs monterey jack cheese , grated
1 lb ricotta cheese
2 eggs
Italian Tortilla Stacks are a Tex-Mex twist on traditional lasagna, using corn tortillas instead of pasta and combining Mexican flavors like green chilies with Italian meat sauce and cheese. This dish is perfect for family dinners or gatherings as it can be prepared in advance and baked when ready to serve.

Instructions

1.Preheat oven to 350 degrees Fahrenheit.
2.Cook ground beef in a large skillet over medium heat until browned and cooked through.
3.Add spaghetti sauce mix, seasoning salt, tomatoes, tomato sauce, water, and green chilies to the skillet and stir to combine.
4.Allow the mixture to simmer for 10-15 minutes until it thickens slightly.
5.In a separate bowl, beat the eggs and mix in ricotta cheese.
6.Grease a 9x13 inch baking dish and begin layering tortillas, ground beef mixture, and Monterey Jack cheese.
7.Add a layer of the ricotta cheese mixture on top of the Monterey Jack cheese.
8.Repeat layering until all ingredients are used up and the top layer is cheese.
9.Cover the dish with aluminum foil and bake for 30 minutes.
10.Remove the foil and continue baking for an additional 10-15 minutes until the cheese is melted and bubbly.
