Ingredients

5 quarts tomatoes ( I use plum or roma )
4 cups chopped onions
4 cups chopped sweet peppers ( I use red & green )
1/4 cup minced garlic
1/4 cup chopped fresh oregano
2 tablespoons olive oil
1 tablespoon sugar

Instructions

1.Begin by sterilizing your canning jars, lids, and rings.

4.Add the chopped tomatoes, sugar, and oregano. Simmer for 30 minutes or until tomatoes have broken down.
5.Fill each sterilized jar with the stewed tomatoes, leaving 1/2 inch headspace. Wipe the rims clean and seal the jars with lids and rings.
6.Process the jars in a boiling water bath for 45 minutes. Remove and let cool on a towel for 12-24 hours. Check that the lids have sealed before storing in a cool, dark place.
