Ingredients

1 large acorn squash , halved and seeded
olive oil
1 cup water
1/2 cup wild rice
1/4 cup raw pumpkin seeds ( I have used sunflower seeds too ) or 1/4 cup pine nuts ( I have used sunflower seeds too )
1 tablespoon minced garlic
1 tablespoon tomato paste
1/2 teaspoon salt
1/3 teaspoon pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1 cup vegetable broth
1/4 cup crumbled goat cheese or 1/4 cup feta cheese

Instructions

1.Preheat the oven to 400°F.
2.Rub the acorn squash halves with olive oil and place them face down on a baking sheet. Roast in the oven for about 20 minutes or until tender.
3.While the squash is roasting, place the water, wild rice, pumpkin seeds, garlic, tomato paste, salt, pepper, basil, and thyme in a crock pot. Stir everything together.
4.Once the squash is done, remove it from the oven and let it cool until you can handle it.
5.Scoop out the flesh of each squash half, leaving a 1/4-inch-thick shell. Add the squash to the crock pot, along with the vegetable broth.
6.Stir everything together and cook on low for 6-7 hours or high for 3-4 hours.
7.Once the rice is cooked and the liquid is absorbed, stir in the crumbled goat or feta cheese. Serve the rice mixture inside the squash shells.
