1 gallon tomato sauce
1 gallon tomatoes , petite diced
1/2 gallon pinto beans , drain , rinsed , precooked
1/2 gallon black-eyed peas , drain , rinsed , precooked
3/4 cup high cliff chili seasoning mix
2 tablespoons liquid smoke
3/4 cup honey
1/2 gallon hermsdorf farm sweet corn
vegetable oil
rice vinegar
cheddar cheese , chopped green onions , sour cream , cilantro , parsley , oyster crackers or tortilla chips , BBQ corn ears

Instructions

1.Heat up vegetable oil in a large pot. Add garlic and cook until fragrant.
2.Add Italian ground sausage and pork shoulder, cook until browned.
3.Pour in tomato sauce, petite diced tomatoes, pre-cooked pinto beans, black-eyed peas, and High cliff chili seasoning mix. Stir and bring to a boil.
4.Reduce heat to a simmer. Add in liquid smoke, honey, sweet corn, and rice vinegar.
5.Let mixture simmer on low for 2-3 hours.
6.Serve with toppings such as chopped cheddar cheese, green onions, sour cream, cilantro, parsley, oyster crackers, tortilla chips, and BBQ corn ears.
