Instructions

1.In a double boiler, melt semisweet and unsweetened chocolate. Turn off heat and add 1/4 cup shortening. Stir until combined and set aside.

3.Beat two eggs in a separate bowl and add the melted shortening. Mix until combined and pour into the large bowl.
4.Add the chocolate mixture to the large bowl and mix with a spatula. Slowly add the all-purpose flour, salt, and the remaining two eggs. Knead the dough until it comes together.
5.Roll out the dough to 1/4 inch thickness. Cut into circles with a cookie cutter. Place 1 teaspoon of chocolate filling in the center of each circle and fold the dough in half. Crimp the edges shut with a fork.
6.In a deep saucepan, heat the remaining shortening over medium-high heat. Fry the ravioli cookies until golden brown, approximately 3-4 minutes. Drain on a paper towel-lined plate and dust with confectioners' sugar before serving.
