Ingredients

2 eggs , separated
1 cup coconut , shredded
1/2 cup pecans or 1/2 cup walnuts , ground
2 teaspoons pecans or 2 teaspoons walnuts , ground
1 package pudding ( included butter recipe cake mix )
1/2 cup brown sugar
1 cup sour cream
1/2 cup water
2 eggs
1/2 cup amaretto di saronno liqueur
6 maraschino cherries
1 cup confectioners ' sugar , sifted
2 tablespoons amaretto liqueur
2 -4 tablespoons water
1 tablespoon corn syrup
2 tablespoons cocoa
1 tablespoon butter , softened

Instructions

1.Preheat oven to 325°F. Grease and flour 12-cup bundt pan.
2.Beat egg yolks in small bowl until thick and light.
3.Mix coconut and ground nuts in medium bowl. Sprinkle with 2 teaspoons ground nuts. Sprinkle pudding over and mix lightly.
4.Beat brown sugar and sour cream in large bowl until well blended. Gradually beat in water and egg yolks. Stir in amaretto liqueur, then nut mixture. Beat egg whites in small bowl until stiff but not dry. Fold into nut mixture in 2 additions. Fold in chopped cherries. Pour batter into prepared pan.
5.Bake cake until tester inserted near center comes out clean, about 55 minutes. (Cake may crack and top will be uneven.) Cool cake in pan on rack 15 minutes. Turn cake out onto rack and cool completely. (Can be made 2 days ahead. Wrap; store at room temperature.)
6.Combine powdered sugar, 2 tablespoons amaretto liqueur, 2 tablespoons water, corn syrup, and cocoa in small bowl; stir until smooth. Drizzle glaze over cake. Let stand until glaze sets, at least 30 minutes. Garnish with additional cherries, if desired.
