Ingredients

1 package Simply Potatoes Diced Potatoes with Onion
1 bay leaf
1/4 lb pancetta , diced and fried ( Italian bacon )
3 hard-boiled eggs , chopped
1 teaspoon italian seasoning
1 lb medium shrimp , size
2 tablespoons olive oil
1 garlic clove , minced
1 teaspoon oregano ( I use dried it adds more flavor )
1 1/2 cups red onions , chopped finely
1/4 cup sun-dried tomato , chopped
1/4 cup fresh basil , chopped finely
2 cups fresh spinach , chopped
3/4 cup asiago peppercorn salad dressing
1 teaspoon sea salt
1 teaspoon ground black pepper

Instructions

1.In a medium pot, boil Simply Potatoes Diced Potatoes with Onion and bay leaf until tender.
2.Remove the bay leaf and drain the potatoes before adding them to a large mixing bowl.
3.Add the diced and fried pancetta, chopped hard-boiled eggs, and Italian seasoning to the bowl with the potatoes and mix well.
4.In a large skillet, heat olive oil over medium heat and add minced garlic, oregano, and chopped red onions. Cook until onions are soft and fragrant, then add medium-sized shrimp and cook until they turn pink.
5.Remove skillet from heat and let it cool down before adding sun-dried tomatoes, chopped basil, and spinach to the bowl with the potato salad mixture.
6.Pour in Asiago peppercorn salad dressing and mix everything well before seasoning with sea salt and ground black pepper to taste.
7.Cut the top off of each tomato and scoop out the inside with a spoon before filling each tomato with the potato salad.
8.Cover and let chill in the fridge for at least an hour before serving.
