1 medium yellow onion , diced
8 ounces sweet Italian sausage , casings removed or 8 ounces bulk sausage meat
1 box frozen chopped spinach , thawed and squeezed dry
1 container ricotta cheese
1 1/2 cups plus 1/2 cup freshly grated parmesan cheese
3 large eggs
salt & freshly ground black pepper
fresh pasta dough , rolled out and cut into 6 by-7-inch rectangles , recipe follows

Italian Sausage, Spinach, and Ricotta Cannelloni is a classic Italian recipe that features large pasta tubes filled with a rich mixture of fresh ricotta cheese, Italian sausage, and spinach. Instructions

1.Preheat the oven to 375 degrees F.
2.In a large skillet over medium-high heat, add the olive oil and onion and cook until the onion is soft, about 5 minutes.
3.Add the sausage and break up with a wooden spoon. Cook until browned and cooked through, about 8 minutes.
4.Add the spinach and cook for 5 minutes, until wilted. Let cool.
5.In a mixing bowl, combine the ricotta cheese, 1 1/2 cups of the parmesan cheese, eggs, salt, and pepper. Add the cooled sausage and spinach mixture.
6.In a large pot of boiling salted water, cook pasta for 4 to 6 minutes, until pliable but still undercooked. Drain and run under cold water to stop cooking.
7.Lay out pasta sheets on a clean surface and spoon 2 tablespoons of filling across each sheet. Roll up the pasta tightly to form a cannelloni.
8.Spread 1 cup of tomato sauce on the bottom of a baking dish. Place cannelloni on top. Top with remaining tomato sauce and remaining 1/2 cup of parmesan cheese.
9.Cover with foil and bake for 30 minutes. Uncover and bake for another 10 to 15 minutes, until cheese is golden and bubbly.
10.Garnish with fresh basil and serve.
