1/2 pound bulk mild Italian sausage
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-fat milk
1 pinch salt

1 container part-skim ricotta cheese

2 jars marinara sauce , divided
1 package no-boil lasagna noodles , divided
1 cup chopped cremini mushrooms , divided
1 package shredded part-skim mozzarella cheese , divided
1/2 cup grated Parmesan cheese , divided
Italian Sausage and Mushroom Lasagna with Bechamel Sauce is a classic Italian dish that is perfect for any occasion. Lasagna is a dish that is loved all over the world thanks to its comforting qualities and versatility. Instructions

1.Preheat oven to 375°F.
2.Coat a large skillet with cooking spray over medium heat. Add the sausage and cook until browned, stirring occasionally to break up any large chunks.
3.In a medium saucepan, melt the butter over medium heat. Whisk in the flour until smooth and cook, stirring constantly, for 2-3 minutes until the mixture turns a light golden brown color.
4.Gradually whisk in the milk and cook, whisking constantly, until the mixture comes to a boil. Reduce heat and simmer for 5 minutes until the sauce has thickened slightly. Stir in the salt, nutmeg, and beaten egg.
5.In a separate bowl, mix together the ricotta cheese, parsley, and half of the Parmesan cheese.
6.Spread half of one jar of the marinara sauce in the bottom of a 9x13 inch baking dish.
7.Layer the lasagna noodles over the sauce, slightly overlapping each noodle. Spread half of the ricotta cheese mixture over the noodles, then half of the browned sausage, half of the mushrooms, and half of the mozzarella cheese. Repeat the layers once more, ending with the remaining mozzarella cheese.
8.Spread the remaining jar of marinara sauce over the top of the lasagna, making sure to cover all of the noodles.
9.Sprinkle the remaining Parmesan cheese over the top of the marinara sauce.
10.Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese on top is golden and bubbly.
