Ingredients

1 lb white rice
4 eggs
1/2 cup grated parmesan cheese
1 lb mozzarella cheese , cut in 16 cubes
1/4 lb genoa salami , cut in small pieces
1 1/2 cups Italian seasoned breadcrumbs
olive oil
spaghetti sauce with meat

Instructions

1.Rinse the rice under cold water, then drain.
2.In a heavy-bottomed pot, bring the rice to a boil in 4 cups of salted water, then lower the heat and cover the pot. Cook for 18-20 minutes or until done.
3.Remove the pot from the heat and let it rest for 15-20 minutes.
4.In a large bowl, beat the eggs and stir in grated parmesan cheese.
5.Add the cooked rice and mix well.
6.Spread the breadcrumbs on a large plate.
7.Take a tablespoon of rice mixture in your hand and press it into a ball.
8.Make an indentation in the center and place a cube of mozzarella and some pieces of salami.
9.Cover the cheese and salami completely with more rice mixture, and shape the ball into an even sphere.
10.Roll the ball in the breadcrumbs until the whole surface is coated.
11.In a large heavy-bottomed pan, heat the olive oil on medium heat.
12.Add the rice balls and cook them until they are golden brown, turning them over with a spoon to make sure they cook evenly.
13.Serve hot with the spaghetti sauce with meat.
