2 tablespoons olive oil
1 onion , chopped

3 cups shredded cabbage
1 potato , peeled and diced
2 1/2 cups cooked white beans
6 slices French or Italian-style bread

Instructions

5.Bring the soup to a boil, then reduce the heat to low and let it simmer for 10 minutes.
6.Add 3 cups of shredded cabbage, 1 diced potato, and 2 and 1/2 cups of cooked white beans to the pot.
7.Cover and simmer for another 20-25 minutes until the vegetables are tender.
8.Preheat the broiler, and toast the bread slices until golden brown on one side.
9.Ladle the soup into bowls, and place a slice of toasted bread on top of each serving.
10.Sprinkle grated Parmesan cheese over the soup and bread, and broil until the cheese is bubbly and golden brown.
