Ingredients

6 eggs
500 ml milk
50 g melted butter ( not hot )
250 g flour ( plain )
1/8 teaspoon nutmeg
salt and pepper
500 g ricotta cheese
1/4 cup parmesan cheese
100 g spinach ( cooked and squeezed )
1 egg yolk
1 kg tomatoes
1/2 cup fresh basil leaf
3 tablespoons olive oil
1 liter bechamel sauce

Instructions

1.In a large bowl, mix together eggs, milk, melted butter, flour, nutmeg, salt and pepper.
2.In a separate bowl mix together ricotta cheese, parmesan cheese, cooked spinach, and egg yolk.
3.Roll out the dough on a floured surface, cut out circles, add 1 tablespoon filling in the centre of each circle, brush the edges with water and fold over to seal. Repeat with remaining circles and filling.
4.In a pan, bring tomatoes and basil to a boil, reduce heat and let simmer for 30 minutes, stirring occasionally.
5.In a separate pan, make bechamel sauce.
6.Fry the panzerotti in hot oil until dark golden brown and serve hot with the tomato sauce and bechamel sauce.
