Ingredients

2 slices pancetta , thick slices , diced
2 green onions , sliced , including some tender green tops
2 tablespoons diced red bell peppers
1 can cannellini beans , rinsed and drained
1 tablespoon chopped fresh basil
4 large eggs
2 tablespoons milk

1/4 cup grated mozzarella cheese , divided
1 -2 teaspoon olive oil
1 tablespoon grated parmesan cheese

Instructions

9.Cook for 8-10 minutes or until the omelet is almost set.
10.Sprinkle remaining mozzarella cheese and parmesan cheese over the omelet.
11.Place the skillet under the broiler and cook until the cheese is melted and golden brown.
12.Using a spatula, loosen the edges of the omelet from the pan and slide onto a cutting board.
13.Cut into wedges and serve.
