Ingredients

1/2 lb cherries
1 teaspoon butter or 1 teaspoon vegetable oil
2 ounces almonds ( ground )
1 tablespoon breadcrumbs ( finely grated )
4 large eggs , divided
4 ounces icing sugar
2 ounces breadcrumbs ( finely grated , 60 g )
1/2 tablespoon cornstarch ( if using frozen cherries )
2 tablespoons nuts liqueur ( alternative Amaretto or Maraschino )
1/2 teaspoon vanilla extract ( grated peel only ) or 1/2 lemon ( grated peel only )
2 tablespoons icing sugar ( to serve )

Instructions

1.Preheat the oven to 350°F (180°C).
2.Butter and flour a 9-inch (24-cm) cake pan.
3.Wash and pit the cherries, then dry them.
4.Put the ground almonds and breadcrumbs in a mixing bowl.
5.Separate the egg yolks and whites.
6.Beat the egg yolks with the icing sugar until fluffy.
7.Beat the egg whites in a separate bowl until stiff but not dry.
8.Fold the almond and breadcrumb mixture into the yolk mixture alternately with the whites.
9.Stir in the cherries, cornstarch (if using), nuts liqueur, and vanilla or lemon peel.
10.Pour the mixture into the prepared pan and bake for about 50 minutes, or until a cake tester comes out clean.
11.Allow the cake to cool for 5 to 10 minutes before removing from the pan.
12.Sprinkle with sifted icing sugar before serving.
