Ingredients

1 1/2 lbs meatloaf mixture ( ground beef , pork , veal )
1/2 cup Italian seasoned breadcrumbs
1 egg
1 garlic clove , minced
1/4 small white onion , grated
3 tablespoons parmigiano , grated
2 tablespoons flat leaf parsley , chopped
1 cup arugula leaves or 1 cup Baby Spinach
6 slices prosciutto
6 slices provolone cheese , deli sliced
salt and pepper
olive oil , for drizzling

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large mixing bowl, combine the meatloaf mixture, Italian breadcrumbs, egg, minced garlic, grated onion, grated parmigiano, chopped parsley, salt and black pepper. Mix well.
3.On a large piece of parchment paper, flatten the meat mixture until it's evenly spread out.
4.Arrange the arugula leaves or baby spinach on top of the meat. Then add the slices of prosciutto and provolone cheese on the top, leaving about one inch around the edges.
5.Carefully roll the meat up, using the parchment paper to help guide it. Be sure to seal the ends and seam so that the filling doesn't fall out. Place seam side down in a baking dish.
6.Drizzle the top with a little bit of olive oil.
7.Bake in the preheated oven for 1 hour or until the meat is cooked through.
