Ingredients

4 tablespoons olive oil
1 medium onion , chopped into 1/2 inch dice
1 lb Italian turkey sausage ( lean )
1 can tomato sauce
2 bunches kale , chopped into 1/2 inch ribbons
1 lb whole wheat penne

Instructions

1.Boil the penne in salted water according to the packet instructions. Drain and set aside.
2.While the pasta is boiling, heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the onion and cook until soft and translucent, around 5 minutes.
3.Add the Italian turkey sausage to the pan and break it up with a wooden spoon. Cook for around 7 minutes or until cooked through, stirring occasionally.
4.Stir in the tomato sauce and kale and reduce the heat to low. Cook for a further 5 minutes or until the kale has wilted.
5.Add the cooked penne to the saucepan with the sausage and kale mixture, along with the remaining 2 tablespoons of olive oil. Toss to combine and serve.
