1 yellow onion

1 -2 head escarole
1 tomatoes

2 cans cannellini beans , thoroughly rinsed and drained

Instructions

1.Wash and cut the head(s) of escarole into approx. 1-inch-by-2 1/2-inch pieces.
2.Extra-virgin olive oil in a large sauté pan over medium heat. When the oil is hot, add the onion, and sauté for about 5 minutes or until the onion is fragrant and has turned translucent and tender.
3.Stir in garlic, and sauté for another 20 seconds until fragrant.
4.Add sausage and crumble it into smaller pieces, and cook until browned, using a spatula to break the larger pieces up.
5.Add the escarole, and cook until it wilts and becomes tender.
6.Add canned cannellini beans, chopped tomatoes, and chicken broth, and stir gently to combine. Bring the mixture to a boil and cook until the liquid is reduced by half.
