Ingredients

1 3/4 cups self rising flour
1 1/4 cups sweet butter , diced at room temperature
1 1/2 tablespoons milk
1/4 cup caster sugar ( superfine )
1/2 finely grated lemon , rind of
1 egg , beaten
1 1/4 cups sifted confectioners ' sugar
2 tablespoons limon cello liqueur or 2 tablespoons lemon syrup
1 tablespoon chopped candied angelica

Instructions

1.Preheat the oven to 180°C.
2.In a food processer, combine the self-rising flour, sweet butter, milk, superfine sugar, and lemon rind. Pulse until a thick dough forms.
3.Roll the dough into a ball and place it between two sheets of baking paper. Flatten the dough to a thickness of about 2 cm with a rolling pin.
4.Cut the dough with a donut cutter and transfer the rings onto baking sheets lined with parchment paper.
5.Bake in the oven for 15-20min or until the rings start to turn golden brown.
6.In a small bowl, mix together sifted confectioner’s sugar, limoncello liqueur or lemon syrup, and chopped candied angelica.
7.While the rings are still warm, brush them with the glaze and let them cool before serving.
