0.5 bottle red wine
2 cups reduced-sodium chicken broth
4 sprigs fresh thyme
1 teaspoon salt
fresh ground black pepper
2 lbs sea scallops , cut into halves
1 lb shrimp , peeled
1/4 cup chopped fresh basil
Italian Fisherman's Stew is a hearty and delicious dish packed with seafood, vegetables, and flavorful broth. Instructions

1.Preheat oven to 400°F and line a baking sheet with parchment paper. Spread the cubed peasant bread in a single layer, drizzle with 1/4 cup olive oil and white wine vinegar. Season with salt and fresh ground black pepper.
2.Bake for 10-15 minutes until lightly browned and crispy. Set aside.
3.Heat 3 tablespoons of olive oil in a large pot over medium-high heat. Add the chopped onion, carrot, and celery and cook until the vegetables have softened, about 7-8 minutes.
4.Add the garlic and cook for an additional minute, until fragrant.
5.Add in the chopped tomatoes, chopped roasted red pepper, orange juice and rind or lemon juice, sugar, red chili pepper flakes, red wine, chicken broth, fresh thyme, salt, and pepper. Stir well and bring to a boil.
6.Once boiling, reduce the heat to low and allow the stew to simmer, covered, for 30 minutes.
7.Add in the sea scallops and shrimp and continue to simmer, uncovered, for an additional 5-7 minutes until the seafood is cooked through.
8.Stir in chopped fresh basil and adjust seasoning as needed.
9.To serve, divide the cubed bread among bowls and ladle the stew over the top.
