Ingredients

3 tablespoons extra virgin olive oil
6 -8 garlic cloves , minced ( I use food processor & finely mince garlic , onion & eggplant )
1 very large eggplant ( or 2 Medium Sized Eggplants , peel 1st then dice in food processor )
1 tablespoon water
1 1/2 - 2 cups Italian seasoned breadcrumbs
1/2 cup fresh parsley , chopped ( I mince this in food processor too )
2 eggs , beaten
1/2 cup grated mozzarella cheese
1/3 cup grated cheese
These Eggplant Balls can be described as a vegetarian alternative to meatballs. This recipe is great for vegetarians, meat lovers, and anyone who enjoys a good serving of balls of goodness. The eggplants are cooked to such a perfect consistency that they can be used as a base for your recipe, and combined with Italian seasoned breadcrumbs, fresh parsley, mozzarella and grated cheese, provide an amazing mix of flavors in your mouth. You can try it with some pasta or make a sandwich with it in a toasted bun with some tomato sauce. You can bake or fry these eggplant balls to perfection making it a versatile ingredient. Instructions

1.Preheat oven to 375F (190C) or Heat oil in frying pan to med-high heat.
2.In a large skillet, heat 3 Tbsp olive oil on medium heat.
3.Add garlic and sauté for 2 minutes until fragrant and golden.
4.Add eggplant and 1 Tbsp of water. Cook for around 10 minutes or until soft and cooked through. Remove from heat and let it cool.
5.In a mixing bowl, combine breadcrumbs, parsley, cheese and 2 beaten eggs. Stir well.
6.Add mixture to cooled eggplant and mix until combined. Form the mixture into golf-sized balls
7.Fro frying - Fry in pan with extra virgin olive oil for about 5 to 8 minutes, until golden.
8.For baking - Place them on an oiled baking sheet and bake for around 30 minutes, turning halfway through, until golden on both sides. Serve hot or warm.
