Ingredients

1 large purple eggplant ( ripened )
2 chicken breasts
1 cup mozzarella cheese ( shredded )
1 egg
1/4 cup extra virgin olive oil
2 cups Italian seasoned breadcrumbs
1/4 cup parmesan cheese ( grated )
This Italian Eggplant (Aubergine) Chicken Spirals recipe is a delicious and creative way to incorporate eggplant into your diet. The eggplant slices are rolled up with tender chicken breasts and crispy breadcrumbs to create a savory and flavorful dish. Instructions

1.Preheat the oven to 400°F (200°C).
2.Slice the eggplant into thin rounds and set aside.
3.Butterfly the chicken breasts to make them thinner, then pound them lightly with a meat mallet or rolling pin.
4.Whisk the egg in a shallow bowl.
5.In a separate shallow bowl mix the breadcrumbs, parmesan cheese, and Italian seasoning.
6.Dip each chicken breast into the egg wash, and then coat thoroughly with the breadcrumb mixture.
7.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
8.Cook the chicken until golden brown on each side, about 2 minutes per side.
9.Remove the chicken from the skillet and place it on a cutting board.
10.Mix the shredded mozzarella cheese into the breadcrumb mixture.
11.Place 2 to 3 eggplant slices on top of each chicken breast and sprinkle with some of the breadcrumb mixture.
12.Roll up the chicken and eggplant tightly to form a spiral.
13.Brush each spiral with olive oil and place on a baking sheet.
14.Bake in the oven for 15 to 20 minutes or until the chicken is cooked through and the spirals are golden brown.
