250 g potatoes ( desiree used , peeled )
1/2 cup milk
25 g butter
300 g plain flour ( preferably 00 plus extra for dusting )
155 g caster sugar
7 g dried yeast
1 egg ( lightly whisked )
2 teaspoons ground cinnamon
vegetable oil ( for deep frying )
200 g chocolate ( dark eating chopped )
200 ml thickened cream ( heavy cream )
Italian doughnuts, also known as bomboloni, are a popular dessert in Italy. They are usually served as a breakfast treat or after dinner dessert, and can be filled with cream, jam, or Nutella. Instructions

1.In a large saucepan, cover the potatoes with cold water and a generous pinch of salt and bring to a boil.
2.Cook for 20 minutes, or until the potatoes are tender and easily pierced with a fork.
3.Drain the potatoes, return them to the pan, and mash them with the milk and butter until smooth.
4.In a large mixing bowl, combine the flour, 100 g of the sugar, and the yeast.
5.Add the mashed potatoes and the egg to the dry ingredients and stir gently to combine.
6.Knead the dough on a lightly floured surface for 8-10 minutes, or until the dough is smooth and elastic.
7.Place the dough in a lightly oiled bowl, cover with a damp cloth, and leave to rise in a warm place for 1 hour, or until doubled in size.
8.In a shallow dish, combine the remaining 55 g of sugar with the cinnamon.
9.Divide the dough into 20 equal pieces and roll them each into a ball.
10.Heat the oil in a large saucepan to 180°C.
11.Using a slotted spoon, lower the doughnuts into the oil in batches and fry for 2-3 minutes, or until golden brown and cooked through.
12.Drain the doughnuts on paper towels to remove excess oil.
13.Toss the doughnuts in the cinnamon-sugar mixture and set aside.
14.To make the chocolate sauce, place the chopped chocolate and cream in a heatproof bowl set over a saucepan of simmering water.
15.Stir gently until the chocolate has melted and the mixture is smooth.
16.Serve the warm doughnuts with the chocolate sauce.
