7 ounces good quality unsweetened chocolate , roughly chopped
1 cup sugar
1/8 teaspoon salt
7 large egg whites
1/4 teaspoon cream of tartar
powdered sugar ( or unsweetened cocoa powder for dusting )

Instructions

1.Preheat the oven to 350°F. Grease a 9-inch cake pan and line the bottom with parchment paper.

7.Cool the cake in the pan on a wire rack for 10 minutes. Run a knife around the edge of the cake to loosen. Remove from the pan and cool completely on the wire rack. Dust with powdered sugar or cocoa powder before serving with whipped cream.
