Ingredients

1/4 cup butter
2 large yellow onions , sliced 1/8 inch thick
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup olive oil
2 lbs boneless skinless chicken breasts , cut into 1/4 inch pieces
1 tablespoon italian seasoning
1 teaspoon garlic salt
12 plain miniature bagels
1 package boursin garlic & herb spreadable cheese , softened
1 jar prepared pesto sauce
grated parmesan cheese
These Italian Chicken and Caramelized Onion Bagel Pizzas are a tasty and easy meal that can be enjoyed for lunch or dinner. Instructions

1.Preheat oven to 375°F (190°C).
2.Melt butter in a pan over medium-high heat. Add onions, balsamic vinegar, salt, and pepper and sauté until the onions are browned and caramelized, about 20 minutes. Set aside.
3.Heat olive oil in a large skillet on medium-high heat. Add chicken, Italian seasoning, and garlic salt. Cook until chicken is browned and no longer pink, about 8 minutes.
4.Cut the bagels in half and spread boursin cheese on each half. Spread pesto sauce on top of the cheese. Add caramelized onions and chicken, and top with grated parmesan cheese.
5.Place bagel pizzas on a baking sheet and bake for 10-12 minutes, until cheese is melted and bubbly and bagels are crispy.
