Ingredients

1 package cream cheese , softened
2 tablespoons butter , softened
1/2 cup freshly grated parmesan cheese
2 tablespoons pesto sauce
9 slices muenster cheese or 9 slices mozzarella cheese , divided
1 can whole tomatoes , undrained
3/4 cup chopped onion
1 tablespoon minced fresh garlic
2 tablespoons olive oil
2 bay leaves
1/2 teaspoon sugar
1/4 teaspoon dried basil
1 jar sun-dried tomatoes packed in oil , drained and chopped
Italian Cheese Terrine is a delicious layered cheese dish with sun-dried tomatoes and pesto, perfect for a weekend brunch or as an appetizer for a special occasion. The dish has a smooth, creamy texture and is served with a tomato sauce. The process of making this dish involves layering the cheeses and preparing the filling, which is then left to set in the fridge for several hours. Instructions

1.In a large mixing bowl, beat cream cheese and butter until smooth.
2.Add grated Parmesan to the bowl and stir until thoroughly combined.
3.Add pesto to the mixture and stir well.
4.Line a loaf pan with plastic wrap and place three slices of cheese on the bottom.
5.Spread one-third of the mixture over the cheese and top with sliced sun-dried tomatoes.
6.Repeat the layering process two more times with remaining cheese, mixture and sun-dried tomatoes.
7.Cover the top with the remaining cheese slices and press slightly.
8.Refrigerate for at least 3 hours or overnight before serving.
9.In a saucepan, heat olive oil and cook onions and garlic over medium-high heat until translucent.
10.Stir in whole tomatoes, bay leaves, sugar, and dried basil.
11.Simmer for 20-25 minutes.
12.Remove the bay leaves and blend the mixture until smooth with an immersion blender.
13.Serve the terrine with sauce drizzled on top.
