Ingredients

2 eggs
1 1/2 lbs lean ground beef
2 cups soft french breadcrumbs
1/2 cup shredded parmesan cheese
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
4 garlic cloves , minced
1 can pizza sauce or ( 8 ounce ) can spaghetti sauce
1 1/2 cups shredded provolone cheese ( or 6 ounces sliced )
1 jar roasted red peppers , drained , chopped
1/4 cup chopped black olives
Italian Cheese-Stuffed Meatloaf is a classic comfort food dish with a twist. The stuffing of cheese, roasted red peppers, and black olives adds depth and flavor to the already delicious meatloaf. Instructions

1.Preheat the oven to 350°F and line a baking dish with parchment paper
2.Beat the eggs in a large bowl then add ground beef, breadcrumbs, parmesan cheese, basil, garlic, salt, and pepper. Mix everything together using your hands.
3.Press half of the beef mixture into the bottom of the prepared dish then add an even layer of shredded provolone cheese on top.
4.Add roasted red peppers and black olives on top of the cheese layer then cover with the remaining beef mixture.
5.Spread pizza or spaghetti sauce evenly on top of the beef mixture.
6.Bake for 1 hour or until the internal temperature of the meatloaf reaches 160°F on an instant-read thermometer. Let stand for 10 minutes before slicing and serving.
