Ingredients

12 puff pastry shells
2 cups pancetta , chopped
2 large onions , chopped
3 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
3 large egg yolks
1/2 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1/2 teaspoon herbes de provence

Instructions

1.Preheat oven to 400°F.

7.In a medium bowl, whisk the egg yolks together. Slowly stream a bit of the onion mixture into the yolks to temper them, then whisk the tempered yolks back into the skillet's onion mixture.
8.Fill each puff pastry shell halfway with the onion mixture.
9.Bake for 10 minutes then remove the puff pastry shells from the oven. Top each with pancetta and spoon the remaining onion mixture into each shell.
10.Place the shells back into the oven and bake for an additional 15 to 20 minutes, until the puff pastry is golden brown.
11.Allow to cool for a few minutes before serving.
