Ingredients

2 -3 small Japanese eggplants
1 zucchini
1 crookneck yellow squash or 1 butternut squash
1 summer squash ( or other soft-skinned squash )
1/2 lb white button mushrooms
1 red bell pepper
2 small red onions
1 fennel bulb
1/2 lb cherry tomatoes
1/2 bunch fresh thyme leave
1 pinch cayenne pepper
1 grated lemon , zest of
1/2 - 1 teaspoon salt
1/2 - 1 teaspoon fresh ground black pepper
9 -10 cloves garlic
2 lemons , juice of
1/4 - 1/2 cup vegetable broth or 1/4-1/2 cup virgin olive oil
1/2 - 1 cup tomato sauce
1 lb uncooked angel hair pasta
The Italian Brochettes with Angel Hair Pasta is a delicious and healthy dish that is packed with a medley of veggies and pasta. Instructions

1.Preheat oven to 400°F.
2.Cut the eggplant, zucchini, crookneck, and summer squash into same-sized pieces and set aside in a bowl.
3.Cut the mushrooms in half if they are large and set aside.
4.Cut the red bell pepper into bite-sized pieces and set aside with the mushrooms.
5.Cut the onions into bite-sized chunks and add them to the bell pepper and mushrooms.
6.Cut the fennel bulb and add to the other vegetables.
7.Add the cherry tomatoes and fresh thyme leaves.
8.Coat the vegetables with salt, pepper, cayenne pepper, grated lemon zest, and garlic. Mix well.
9.Squeeze lemon juice over the vegetables and add either vegetable broth or olive oil.
10.In a separate bowl, coat the vegetables with some tomato sauce.
11.Thread the vegetables onto skewers and place them onto a baking sheet lined with parchment paper.
12.Bake the skewers in the oven for 25-30 minutes, or until lightly browned.
13.Boil the angel hair pasta in a pot of salted water for 5-7 minutes.
14.Drain the pasta and toss with some tomato sauce.
15.Serve the brochettes with the angel hair pasta.
