1 package Philadelphia Cream Cheese , at room temperature
1 cup unsalted butter , softened
2 1/4 cups flour
3 large eggs
1 2/3 cups brown sugar
2 3/4 cups crushed walnuts
3 teaspoons vanilla extract
1 dash salt
icing sugar , for dusting
Italian Biscotti Di Noci is a twice-baked cookie made with cream cheese, walnuts, and brown sugar. This nutty and crunchy cookie is perfect for a snack and can be enjoyed with a hot cup of coffee. The biscotti cookie originated in the city of Prato, Italy, and was created as a bread that would last for months. The word 'biscotti' comes from the Latin word 'bis' which means twice and 'coctus' which means baked, because it is baked twice. These biscotti can be stored in an airtight container for up to a month, making them a perfect make-ahead dessert.

Instructions

1.Mix the flour and salt and set aside. Preheat your oven to 350°F.
2.In a separate bowl, whisk the eggs with the brown sugar.
3.Add the softened cream cheese, butter, vanilla extract, and mix.
4.Add the flour mixture and mix until well combined.
5.Fold in the crushed walnuts evenly.
6.Divide the dough into 4 parts and shape them into 2-inch wide and 11-inch long rolls.
7.Place them on a baking sheet and bake them for 25 to 30 minutes or until the edges are golden brown. Take them out of the oven and let them cool for 10 minutes.
8.Cut the rolls into 1/2- inch thick cookies.
9.Place the cookies back onto the baking sheet and bake them for another 10-12 minutes or until golden brown. Take them out of the oven and cool them on a wire rack. Once cooled, dust them with icing sugar before serving.
