Ingredients

3 eggs
1/4 lb butter
1/4 cup milk
1 cup sugar
1 teaspoon baking powder
2 2 teaspoons anise extract or 2 teaspoons almond extract ( et cetera )
2 1/2 cups flour
1/4 teaspoon salt
1/2 cup chopped nuts or 1/2 cup dried fruit ( or both )
Biscotti alla mascia are an Italian classic that originated in Tuscany. This biscuit recipe is a variation on the traditional recipe that uses anise extract or almond extract, chopped nuts or dried fruit. Biscotti are twice-baked cookies that are very hard and dry, which makes them perfect for dipping into coffee, hot chocolate or milk. They are great for breakfast, snack or dessert. You can use any type of nut or dried fruit that you prefer, such as almonds, hazelnuts, figs or cranberries.

Instructions

1.Preheat the oven to 375°F.
2.Beat the eggs, butter, milk, and sugar together until light and fluffy.
3.Sift the flour, baking powder, and salt together, then gradually add the mixture to the egg mixture until well blended.
4.Stir in the anise extract or almond extract, and mix in the chopped nuts or dried fruit.
5.Divide the dough into two portions, and shape each into a log about 3 inches wide and 12 inches long.
6.Place the logs onto a greased baking sheet and bake for 25-30 minutes, until lightly golden brown.
7.Let cool for 10 minutes, then slice diagonally into 1-inch wide slices.
8.Lay the slices cut side down onto the baking sheet and bake for an additional 10-15 minutes until crisp and lightly browned.
