Ingredients

8 slices bacon
1 lb boneless skinless chicken breast
12 ounces focaccia bread ( sliced into 1/2 in thick pieces )
2 large tomatoes ( cored & sliced )
8 eggs or 2 cups egg substitute
1 1/2 cups heavy cream ( light cream or milk may also be used . You decide this . )
2 cups cheddar cheese ( grated )
1 teaspoon salt
pepper ( to taste )

Instructions

1.Cook bacon in large skillet until crisp.
2.Remove bacon from skillet using slotted spoon and place on paper towels to drain.
3.Reserve 2 tablespoons of bacon drippings in skillet and discard the rest.
4.Cut chicken into bite-sized pieces and cook in reserved bacon drippings over medium heat until no longer pink inside. Discard any remaining drippings, if necessary.
5.Preheat oven to 350 degrees F.
6.Layer half of the focaccia pieces in the bottom of a greased 9×13 inch baking dish.
7.Top with chicken, bacon, and sliced tomatoes.
8.Layer the remaining focaccia pieces on top of the vegetables and meat.
9.In a mixing bowl, whisk together the eggs, cream, salt, and pepper until well combined.
10.Pour the egg mixture evenly over the top of the bread and meat layers.
11.Sprinkle the cheddar cheese over the top of the egg mixture.
12.Bake in preheated oven for 35-40 minutes or until the top is golden brown and a knife inserted near the center of the casserole comes out clean.
13.Allow to cool slightly before slicing and serving.
