125 g ground almonds
1 cup sugar
2 large egg whites
1/2 teaspoon vanilla
1 -2 drop almond essence
blanched almond , for decorating

Instructions

1.Preheat your oven to 160°C (325 F).
2.In a bowl, combine the ground almonds and sugar.

4.Stir in the vanilla and almond essence into the egg whites.
5.Fold the egg white mixture into the almond mixture and stir until well combined.
6.Cover the mixture and refrigerate for at least an hour.
7.Line a baking tray with parchment paper.
8.Roll the mixture into small balls and place on the baking tray, making sure there is enough distance between each ball.
9.Press down on each ball lightly to flatten.
10.Place a blanched almond on top of each biscuit for decoration.
11.Bake for 15-20 minutes or until lightly golden.
12.Leave to cool before serving.
