Ingredients

1 1/2 cups israeli couscous
3 cups boiling water
salt
1 tablespoon olive oil
2 cups corn kernels
1 medium onion , finely chopped
1 teaspoon ground coriander
1/4 teaspoon caraway seed
1 red bell pepper , finely chopped
2 jalapenos , seeded and minced
2 scallions , thinly sliced
3 tablespoons finely chopped mint
1/3 cup fresh lime juice
1/4 cup canola oil
2 tablespoons rice wine vinegar
1 tablespoon honey
1/2 teaspoon finely grated lime zest
fresh ground pepper
This Israeli Couscous and Corn Salad is a delightful summer side dish or light meal that's easy to make and full of fresh flavors. Instructions

1.Rinse the Israeli couscous thoroughly in cold water, then place it in a medium saucepan with 3 cups of boiling salted water. Cook for around 10-12 minutes until tender, then drain and run under cold water
2.In a large skillet, heat up the olive oil over medium heat and add the corn kernels and onion. Cook until the onion becomes translucent, then add the coriander and caraway seeds and cook for 1-2 minutes more.
3.In a large bowl, toss together the cooked couscous, corn, onion mixture, red bell pepper, jalapenos, scallions, and mint.
4.In a small bowl, whisk together the lime juice, canola oil, rice wine vinegar, honey, and lime zest. Season with pepper and pour over the salad, tossing well to mix.
5.Chill in the refrigerator for at least 30 minutes before serving.
