Ingredients

1 3/4 cups water
1 tablespoon cornstarch
3/4 cup brown sugar
1/2 cup soy sauce
1/2 cup pineapple tidbits
1/4 cup pineapple juice , from pineapple tidbits
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
2 teaspoons minced fresh ginger ( or dry )
12 chicken tenderloins
12 flour tortillas
2 cups shredded monterey jack cheese
4 cups shredded lettuce
1 1/2 cups pineapple tidbits
2 medium tomatoes , chopped
1/2 cup chopped green onion ( green part only )

Instructions

1.To make the marinade, combine water and cornstarch in a saucepan and bring to a boil. Reduce heat to low and add brown sugar, soy sauce, pineapple tidbits, pineapple juice, garlic powder, onion powder, ginger, and chicken tenderloins. Let it marinate for at least 30 minutes.
2.Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and grill for 2-3 minutes per side or until cooked through.
3.Warm tortillas until soft and pliable.
4.Fill each tortilla with chicken, Monterey Jack cheese, lettuce, pineapple tidbits, tomatoes, and green onions.
5.Serve and enjoy!
