Ingredients

2 cans of condensed chicken soup ( I use Campbell 's but I 'm sure any is fine )
1 soup can refilled with milk
3 tablespoons single cream ( optional but makes them super creamy ) ( optional )
150 g mushrooms , chopped into large chunks
3 large carrots , chopped into small cubes
100 g frozen peas
1 large onion , sliced finely
2 tablespoons butter
4 chicken breasts , chopped into chunks ( skinless )
1 package of ready made puff pastry
1 egg , to brush on the top
3 chicken stock cubes ( oxo is best )
salt and pepper
These irresistible Individual Chicken and Vegetable Pies are perfect for a comforting meal on a chilly evening. They are easy to make and contain a delicious combination of chicken, vegetables, and puff pastry. Instructions

1.Preheat the oven to 180C.
2.In a large saucepan, melt the butter, and add onions, chicken, and mushrooms, followed by chicken soup, milk, chicken stock cubes, salt and pepper.
3.Add the frozen peas, chopped carrots, and single cream, and continue to cook over low heat for around 10 minutes until the vegetables are tender.
4.Roll out the puff pastry and cut it into 4-6 squares. Place the chicken and vegetable mixture into some ovenproof bowls. Top each bowl with the puff pastry square, pressing the edges down to seal them.
5.Use a knife to make some holes in the top. Whisk the egg and brush it over the top of the pastry for a golden look.
6.Bake for 25-30 minutes, or until the pastry on top of the pies is nicely risen and golden brown.
