Ingredients

2 -3 boneless chicken thighs
8 fresh shiitake mushrooms
8 shishito green peppers or 3 small bell peppers
2 -3 tablespoons mirin ( or 2-3 tbsp . sake + 2 tsp . sugar )
2 -3 tablespoons soy sauce
japanese sansho pepper ( optional )
shichimi togarashi pepper or red chili pepper flakes ( optional )
Iron Chef Winner's Japanese Pan-Fried Chicken is a delicious dish that is highly popular throughout Japan. It is a simple and easy-to-make dish that can be enjoyed as a standalone meal or as a side dish for rice or noodles. This dish features juicy pan-fried chicken pieces and savory shiitake mushrooms combined with shishito peppers or bell peppers and seasoned with traditional Japanese mixed sansho pepper or shichimi togarashi pepper or red chili pepper flakes. Instructions

1.Slice the chicken thighs into bite-size pieces and leave them to air-dry for about 10 minutes.
2.Remove the stems of the shiitake mushrooms and cut the caps in half. Remove the stem of the shishito peppers and cut them into bite-size pieces if using bell peppers, remove the seeds and cut them into bite-size pieces.
3.Heat about one tablespoon of oil in a non-stick frying pan over medium-high heat. Add the chicken and cook until lightly browned.
4.Add the mushrooms and peppers and cook for another 2-3 minutes.
5.Combine the mirin and soy sauce, and pour over the chicken and vegetables. Cook until the sauce has thickened.
6.Sprinkle with japanese sansho pepper and/or shichimi togarashi pepper or red chili pepper flakes (optional). Serve and enjoy!
