1/4 cup Irish whiskey , plus more

2 cups seedless raisins
8 ounces mixed candied fruit , chopped
1 1/2 cups pecans , chopped
8 ounces candied red cherries , halved
4 ounces candied green cherries , halved

Instructions

1.Preheat oven to 300°F.
2.Mix flour, baking powder, cloves, mace and cinnamon.

5.Add apricot halves, Irish whiskey, raisins, candied fruit, pecans and cherries. Stir until well combined.
6.Pour mixture into a greased and lined 9-inch square cake pan.
7.Bake 2 1/2 - 3 hours or until a toothpick inserted in the center comes out clean.
8.Remove cake from pan and prick all over with a fork. Drizzle whiskey all over the cake.
9.Wrap the cake in cheesecloth and age for several weeks before serving.
