Ingredients

225 g raisins
110 g currants
350 g sultanas
110 g mixed peel ( candied peel )
225 g demerara sugar ( or raw sugar )
1 tea bag ( your favourite variety )
110 g walnuts , roughly chopped
275 ml boiling water
1 large egg , at room temperature
2 tablespoons milk
450 g self-raising flour
The Irish Tea Cake is a popular type of cake baked to celebrate St.Patrick's day. Instructions

1.In a large bowl, mix together the raisins, currants, sultanas, mixed peel, and demerara sugar.
2.Add the tea bag to 275ml of boiling water and steep for 5 minutes.
3.Pour the tea into the bowl with the fruit mixture and stir until all ingredients are well combined.
4.Add the roughly chopped walnuts to the mixture.
5.In a separate bowl, beat the egg and milk together and then add it to the fruit mixture.
6.Slowly add the self-raising flour to the fruit mixture, mixing until well combined.
7.Preheat your oven to 180C/350F.
8.Grease a 20cm/8 inch cake tin with butter and pour in the cake mixture.
9.Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
10.Once the cake has cooled, dust with icing sugar before serving.
