250 g mixed dried fruit , any fruit combination can be used
125 g dried apricots , chopped
1 cup raw sugar
1 cup strong black tea
1 egg , beaten
100 g self-raising flour

Instructions

1.Preheat your oven to 160°C (fan-forced) and line an 8-inch loaf pan with baking paper.

4.Add the self-raising flour and stir until all ingredients are combined.

7.Remove from the oven and allow to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing and serving.
