Ingredients

1 1/2 lbs lamb ( neck or breast )
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
3 tablespoons bacon drippings
2 onions , peeled and sliced
stock or water , to cover
1 turnip , peeled and diced
1 stalk celery , diced
2 carrots , peeled and diced
2 cups potatoes , peeled and cubed
parsley sprig
1 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon bacon drippings
1/3 cup milk ( up to 1/2 cup )

Instructions

1.Preheat the oven to 375°F ( 190°C ).
2.Season the lamb with salt and pepper. Coat the lamb with flour.

4.Add the onions, and cover with stock or water.
5.Add the turnip, celery, carrots and potatoes.
6.Put the lid on and bake in the oven for at least 2 hours.
7.Sift together the flour, salt, and baking powder into a bowl.
8.Add the bacon drippings and enough milk to make a light dough.
9.Drop the dough by spoonfuls onto the top of the stew.
10.Cover the pot and cook for 20 minutes until the dumplings are fluffy and the meat is tender. Serve hot.
