Ingredients

2 cups split peas
cold water , to cover peas
10 cups water
2 pig 's feet , split
1/2 cup chopped onion
1 cup chopped celery
1/2 cup chopped carrot
1 medium potato , peeled , chopped
1 bay leaf
1 teaspoon salt
1/4 teaspoon crumbled dried thyme
1 dash cayenne pepper
2 tablespoons butter
2 tablespoons flour
2 slices thick white bread
2 tablespoons butter or 2 tablespoons margarine
Irish split pea soup with crubeens (pig's feet) is a classic Irish dish that is perfect for a cold winter's day. Instructions

1.Rinse the split peas in a sieve under cold water and drain well.
2.Place the peas in a large pot and add enough cold water to cover them.
3.Bring to a boil, then reduce the heat and simmer for about 10 minutes.
4.Remove the pot from the heat and drain the peas.
5.Rinse the pot and return it to the stove over medium-high heat.
6.Add 10 cups of water, the pig's feet, onion, celery, carrot, potato, bay leaf, salt, thyme, and cayenne pepper.
7.Bring to a boil, then reduce the heat and simmer for about 2 hours.
8.Remove the pig's feet from the pot and discard the bones and skin.
9.In a separate pan, melt 2 tablespoons of butter over low heat.
10.Add the flour and stir to make a roux.
11.Add 1 cup of the broth from the pot to the roux and whisk until smooth.
12.Slowly pour the roux mixture back into the pot, stirring constantly.
13.Add the split peas and simmer for another 20-30 minutes, or until the soup has thickened.
14.Remove the bay leaf and serve the soup hot, garnished with the slices of bread and additional melted butter or margarine.
