Instructions

1.In a large bowl, whisk together eggs, cream, salt, and white pepper.

3.Add Irish bangers to skillet and cook until brown, about 2-3 minutes per side. Remove sausages from skillet and keep warm.
4.In the same skillet, melt remaining 4 tablespoons of butter. Add mushrooms and 1 teaspoon of cajun seasoning and cook for 2-3 minutes, stirring occasionally.
5.Add green pepper and serrano peppers to skillet and cook for another 2 minutes. Add green onion and parsley to skillet and cook for 1 minute.
6.Pour in egg mixture and reduce heat to medium-low. Cook for 2-3 minutes, stirring constantly, until eggs are soft and set.
7.Sprinkle shredded Irish farmhouse cheese over scrambled eggs and cook until melted and bubbly, about 1-2 minutes.
8.Slice bangers and serve with scrambled eggs and fresh strawberries on the side.
