Ingredients

3 1/2 tablespoons unsalted butter
9 ounces sea scallops , quartered
4 slices bacon , chopped
1 large onion , peeled and chopped
2 stalks celery , diced
2 carrots , peeled and diced
3 medium russet potatoes , peeled and diced ( or use Yukon Gold )
2 sprigs fresh thyme
3 tablespoons fresh Italian parsley , chopped
2 cups chicken broth ( or vegetable broth )
2 cups whole milk , scalded
9 ounces seafood , cooked ( see recipe description )
1 tablespoon fresh lemon juice
salt and pepper , to taste

Instructions

1.Melt 1 tablespoon of butter in a large pot over medium-high heat.
2.Add scallops and cook until golden-brown, about 2 minutes per side. Remove from the pot and set aside.
3.Add bacon to the pot and cook until crisp, about 5 minutes. Remove from the pot and set aside.
4.Add 2 1/2 tablespoons of butter to the pot and melt. Add onions, celery, carrots, and potatoes to the pot and cook until the vegetables are soft, about 10 minutes.
5.Add thyme, parsley, broth, and milk to the pot and bring to a simmer. Cook for 10 minutes or until the potatoes are tender.
6.Add the cooked seafood, lemon juice, salt, and pepper to the pot. Cook for an additional 5 minutes or until the seafood is heated through.
7.Serve hot and sprinkle with reserved bacon.
